Lifehacker's a fabulous website that offers up "hacks" on how to do things better from day to day life and quite a ways back they posted what I felt to be a very interesting dietary substitution.
You know substitutions I'm sure - apple sauce for oil, Splenda for sugar etc., but this one was really quite unique and specific to of all things, cupcakes.
The recipe is simple:
1 box cupcake mix
1 can of your favourite diet soda
All done.
Honestly, the diet drink is supposed to substitute for the water, eggs and oil.
I've been meaning to try it, but haven't got around to it so thought I'd throw it up here (no pun, honestly, no pun) and hope that one of my readers might give it a go and give us a comment. Icing wise Lifehacker recommends light cool whip (with some food colouring)
Apparently the average box of cupcakes will yield about 2 dozen 90 Calorie cupcakes.

I'm not convinced. I read on Hungry Girl that you could make brownies using a brownie mix and a can of pumpkin puree - I was very excited and tried it, but wouldn't call the result "brownies", more pumpkiny-chocolate paste. We ended up throwing them out.
ReplyDeleteThis is a perfect example of how people tend to care more about what they're not eating instead of what they are eating - sure these may have fewer calories, but how is a can of diet soda better for you than eggs and oil? Surely there are healthier substitutions!
The point of this was not to suggest that diet pop is "healthier" than eggs and oil. The point is that substituting the major source of fat and calories (oil) for something that is non-caloric can dramatically reduce the amount of calories in the cupcake. This is beneficial for individuals trying to lose weight or control their weight in general. Cupacakes can easily be 300+ calories.
ReplyDeleteSometimes what you are NOT eating is VERY important. Especially when what you ARE eating is loading with calories.
I have no idea if this would work, but it seems interesting.
A common recipe on Weight Watchers message boards is "Diet Coke cake" which involves a can of Diet Coke and a box of cake mix. Many posters who have tried it say they like it, so I imagine this would be similar and would work.
